How to make it
- Combine the flour, yeast, sugar and salt in a bowl, then add the warm water and olive oil and mix to a rough dough.
- Knead on a lightly floured surface for about 8 minutes until smooth and springy, then cover and leave in a warm place for 1 to 1.5 hours until doubled in size.
- Knock back the dough, divide into 8 equal balls, cover and rest for 15 minutes so the gluten relaxes and they roll out easily.
- Roll each ball into a round about 5 mm thick, keeping the thickness even so a pocket can form, and let them rest for another 10 minutes.
- Heat a baking stone or heavy tray in an oven preheated to 250 C, then bake the rounds 2 or 3 at a time for 3 to 4 minutes until they puff up into balloons and the tops are just set.
- Wrap the baked pitas in a clean cloth as they come out so they stay soft and the steam helps keep the pockets open, then serve warm.
