Nigerian Spring Rolls

How to make it
- Heat 2 tablespoons of the oil in a large pan over medium-high heat, add the onion, garlic and ginger and cook for 2 minutes until fragrant, then add the minced beef or fish and brown it, breaking it up, until fully cooked through with no pink remaining.
- Stir in the diced potatoes and carrots with a splash of water, cover and cook for 6 to 8 minutes until just tender but not mushy, then add the cabbage and cook 2 minutes more so it wilts slightly while keeping a little bite.
- Season the filling with the oyster sauce, soy sauce, curry powder, salt and pepper, stir in the spring onions, then spread the mixture on a tray to cool completely, draining off any excess liquid so the wrappers do not turn soggy.
- Place a wrapper as a diamond in front of you, spoon about 2 tablespoons of filling near the bottom corner, fold that corner over the filling, fold in both sides, then roll tightly, sealing the final edge with the flour-and-water paste.
- Repeat with the remaining wrappers and filling, keeping the finished rolls under a damp cloth so they do not dry out.
- Heat the vegetable oil in a deep pan to 175 C, then fry the spring rolls in small batches for 3 to 4 minutes, turning, until evenly golden and crisp.
- Drain the rolls on a wire rack or paper towels and let them rest for a couple of minutes before serving warm with a dipping sauce.
