How to make it

  1. Heat 2 tablespoons of the oil in a large pan over medium-high heat, add the onion, garlic and ginger and cook for 2 minutes until fragrant, then add the minced beef or fish and brown it, breaking it up, until fully cooked through with no pink remaining.
  2. Stir in the diced potatoes and carrots with a splash of water, cover and cook for 6 to 8 minutes until just tender but not mushy, then add the cabbage and cook 2 minutes more so it wilts slightly while keeping a little bite.
  3. Season the filling with the oyster sauce, soy sauce, curry powder, salt and pepper, stir in the spring onions, then spread the mixture on a tray to cool completely, draining off any excess liquid so the wrappers do not turn soggy.
  4. Place a wrapper as a diamond in front of you, spoon about 2 tablespoons of filling near the bottom corner, fold that corner over the filling, fold in both sides, then roll tightly, sealing the final edge with the flour-and-water paste.
  5. Repeat with the remaining wrappers and filling, keeping the finished rolls under a damp cloth so they do not dry out.
  6. Heat the vegetable oil in a deep pan to 175 C, then fry the spring rolls in small batches for 3 to 4 minutes, turning, until evenly golden and crisp.
  7. Drain the rolls on a wire rack or paper towels and let them rest for a couple of minutes before serving warm with a dipping sauce.
