How to make it

  1. Rinse the ofada rice several times until the water runs much clearer, then parboil it in salted water for about 10 minutes, drain and rinse again to keep the grains separate.
  2. Return the rice to the pot with fresh water just covering it, add one crumbled seasoning cube and a pinch of salt, and cook over low heat until tender but not mushy, then spread it on a tray to cool and dry slightly.
  3. Dice the carrots, bell peppers and green beans into small even pieces and finely chop the onion and spring onions.
  4. Heat the groundnut oil in a wide pan or wok over high heat, add the onion and fry for 1 minute, then add the carrots and green beans and stir-fry for 3 minutes so they stay crisp.
  5. Add the bell peppers, the curry powder and the remaining seasoning cube, and stir-fry for another 2 minutes until fragrant.
  6. Tip in the cooled rice and toss continuously over high heat for 3 to 4 minutes so everything combines and heats through evenly.
  7. Scatter in the spring onions, taste and adjust the salt, toss once more and serve immediately.
