Plantain Frittata I

How to make it
- Peel the plantains and cut them into small cubes about 1 cm across, then finely dice the onion and mince the garlic.
- Heat 2 tablespoons of the oil in a non-stick ovenproof skillet over medium heat and fry the plantain cubes for 6 to 8 minutes, turning often, until golden on all sides, then transfer them to a plate.
- Add the remaining oil to the same pan and soften the onion for 3 to 4 minutes, then stir in the garlic, thyme and crumbled stock cube and cook for 1 minute more until fragrant.
- In a bowl, beat the eggs with the black pepper and a little salt (go easy, as the stock cube is salty), then fold the fried plantains and the onion mixture into the eggs.
- Return everything to the skillet over low-medium heat, pour in the egg mixture, spread the plantains evenly and cook undisturbed for 5 to 6 minutes until the edges set and the bottom is golden.
- Slide the pan under a hot grill or into a 190 C oven for 5 to 7 minutes until the top is set and the centre reaches at least 71 C and no longer looks wet.
- Let the frittata rest for 5 minutes, then loosen the edges, slide it onto a board and cut into wedges to serve.
