How to make it
- Place the cornmeal in a large bowl, pour over the boiling water and stir to a thick paste, then leave it to cool to lukewarm so the grains swell and soften.
- Dissolve the yeast and sugar in the warm water and let it stand for 5 to 10 minutes until frothy.
- Stir the yeast mixture, olive oil and salt into the cooled cornmeal, then work in the bread flour to form a dense, slightly sticky dough and knead for about 8 minutes.
- Cover the bowl and leave the dough to rise in a warm place for around 1 hour until visibly puffed, though it will not double like a wheat dough.
- Shape the dough into a round domed loaf on a floured tray, dust the top with a little cornmeal, and let it prove for a further 40 minutes.
- Bake in an oven preheated to 200 C for 40 to 45 minutes until the crust is firm, deeply golden and the loaf sounds hollow when tapped underneath.
- Cool the broa completely on a wire rack before slicing, as it firms up as it cools.
