How to make it

  1. Take the prime rib out of the fridge 2 hours before cooking so it comes to room temperature, which helps it roast evenly. Pat it thoroughly dry with paper towels.
  2. Mix the olive oil, thyme, rosemary, garlic powder, salt and black pepper into a paste and rub it all over the roast, pressing it well into the surface and the fat cap.
  3. Heat the oven to 230C. Set the roast fat-side up on a rack in a roasting tin and sear in the hot oven for 20 minutes to build a crust.
  4. Reduce the oven to 160C. Toss the potatoes and parsnips with the extra olive oil and a little salt, scatter them around the roast, and continue cooking.
  5. Roast for about 1 hour 15 minutes more, turning the vegetables once, until a meat thermometer in the thickest part reads 52C for medium-rare or 57C for medium; the temperature will rise as it rests.
  6. Transfer the roast to a board, tent loosely with foil and rest for 20 minutes while the vegetables finish crisping in the oven if needed.
  7. Carve the rested beef against the grain into thick slices and serve with the roasted potatoes and parsnips alongside, spooning over any resting juices.
