How to make it
- Take the prime rib out of the fridge 2 hours before cooking so it comes to room temperature, which helps it roast evenly. Pat it thoroughly dry with paper towels.
- Mix the olive oil, thyme, rosemary, garlic powder, salt and black pepper into a paste and rub it all over the roast, pressing it well into the surface and the fat cap.
- Heat the oven to 230C. Set the roast fat-side up on a rack in a roasting tin and sear in the hot oven for 20 minutes to build a crust.
- Reduce the oven to 160C. Toss the potatoes and parsnips with the extra olive oil and a little salt, scatter them around the roast, and continue cooking.
- Roast for about 1 hour 15 minutes more, turning the vegetables once, until a meat thermometer in the thickest part reads 52C for medium-rare or 57C for medium; the temperature will rise as it rests.
- Transfer the roast to a board, tent loosely with foil and rest for 20 minutes while the vegetables finish crisping in the oven if needed.
- Carve the rested beef against the grain into thick slices and serve with the roasted potatoes and parsnips alongside, spooning over any resting juices.
