How to make it

  1. Finely chop the onion, carrot and celery, then soften them gently in the olive oil over medium heat for about 8 minutes until sweet and translucent, adding the minced garlic for the last minute.
  2. Raise the heat, add the minced beef and brown it well, breaking up any clumps, until it is fully cooked and no pink remains.
  3. Pour in the white wine and let it bubble until mostly evaporated, then stir in the tomato paste, chopped tomatoes and a splash of water, season, and simmer gently for 30 minutes until rich and thick.
  4. Meanwhile bring a large pot of salted water to a boil and cook the fresh tagliatelle for 2 to 3 minutes until just shy of al dente, then drain.
  5. Toss the drained pasta with the meat sauce and the chopped parsley, then transfer to a buttered baking dish.
  6. Scatter over the torn mozzarella and grated parmesan and dot with the butter.
  7. Bake in an oven preheated to 200 C for 20 to 25 minutes until bubbling and golden on top, then rest for 5 minutes before serving.
