How to make it

  1. Heat the olive oil in a large pot over medium heat and brown the cubed turkey on all sides for about 5 minutes, then remove it to a plate.
  2. Add the onion, carrots and celery to the pot and cook for 6 to 7 minutes until softened, then stir in the garlic, sage, rosemary and thyme and cook for another minute until fragrant.
  3. Pour in the stock, return the turkey to the pot, bring to a boil then reduce to a simmer and cook for 20 minutes until the turkey is tender and cooked through to an internal temperature of 74 C.
  4. Add the broccoli florets and the egg noodles and simmer for 7 to 8 minutes until the noodles are tender and the broccoli is bright green.
  5. Lightly beat the egg white and drizzle it slowly into the gently simmering soup while stirring, so it forms delicate ribbons.
  6. Season the soup to taste with salt and pepper, then remove from the heat.
  7. Ladle into bowls and serve hot, ideally with crusty bread alongside.
