How to make it
- Preheat the oven to 175 C (350 F) and grease and lightly flour a 20 cm square or 23 cm round cake pan.
- In a large bowl, cream the softened butter and sugar together with an electric mixer until pale and fluffy, then beat in the egg followed by the applesauce.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, allspice, salt, and ground almonds.
- Gradually fold the dry ingredients into the wet mixture, stirring just until no streaks of flour remain, then fold in the raisins.
- Scrape the batter into the prepared pan and smooth the top with a spatula.
- Bake for 35 to 40 minutes, until the cake is golden, springs back when lightly pressed, and a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely before slicing.
