How to make it

  1. Finely mince the garlic and peeled ginger, and grate the tomato on the coarse holes of a box grater, discarding the skin so you have a smooth pulp.
  2. Warm the olive oil in a small heavy saucepan over medium-low heat and gently cook the garlic and ginger for about 1 minute until fragrant but not browned.
  3. Add the balsamic vinegar, honey, and grated tomato, and stir to combine, then bring the mixture to a gentle simmer.
  4. Lower the heat and let it simmer slowly, stirring occasionally, for 12 to 18 minutes until the glaze has reduced by roughly half and coats the back of a spoon.
  5. Keep in mind the glaze thickens further as it cools, so pull it off the heat while it is still slightly looser than your final desired consistency.
  6. Season with a pinch of salt, strain if you prefer a smooth glaze, then cool and drizzle over salads, roasted vegetables, or grilled meats.
