How to make it
- Make the pickle by tossing the julienned carrot and daikon with the salt and 1 tablespoon of the sugar, then let them sit for 10 minutes and squeeze out the excess liquid.
- Dissolve the remaining 2 tablespoons of sugar in the warm water and vinegar, pour over the carrot and daikon, and let them pickle for at least 30 minutes (or up to a few days refrigerated).
- If using grilled pork, marinate and cook it over medium-high heat until charred and cooked through to an internal temperature of 145 F with a 3-minute rest, then let it rest before slicing thinly.
- Warm the baguettes in a hot oven for 3 to 5 minutes until the crust is crisp, then slice each lengthwise without cutting all the way through.
- Spread mayonnaise on both cut sides and add a drizzle of soy or seasoning sauce, then layer in the sliced protein or pâté.
- Drain the pickled carrot and daikon and tuck them into each baguette along with the cucumber spears, cilantro, and jalapeño slices.
- Press the sandwiches closed gently and serve immediately while the bread is still crisp.
