How to make it

  1. Make the pickle by tossing the julienned carrot and daikon with the salt and 1 tablespoon of the sugar, then let them sit for 10 minutes and squeeze out the excess liquid.
  2. Dissolve the remaining 2 tablespoons of sugar in the warm water and vinegar, pour over the carrot and daikon, and let them pickle for at least 30 minutes (or up to a few days refrigerated).
  3. If using grilled pork, marinate and cook it over medium-high heat until charred and cooked through to an internal temperature of 145 F with a 3-minute rest, then let it rest before slicing thinly.
  4. Warm the baguettes in a hot oven for 3 to 5 minutes until the crust is crisp, then slice each lengthwise without cutting all the way through.
  5. Spread mayonnaise on both cut sides and add a drizzle of soy or seasoning sauce, then layer in the sliced protein or pâté.
  6. Drain the pickled carrot and daikon and tuck them into each baguette along with the cucumber spears, cilantro, and jalapeño slices.
  7. Press the sandwiches closed gently and serve immediately while the bread is still crisp.
