How to make it
- Use cold rice cooked at least a few hours ahead, and break up any clumps with your fingers so the grains separate freely.
- Heat 1 tablespoon of the oil in a wok or large skillet over high heat, pour in the beaten eggs, scramble them quickly until just set and no longer runny, then transfer to a plate.
- Add the remaining oil to the hot pan, stir in the garlic and the white parts of the spring onions, then add the mushrooms and stir-fry until they release their moisture and start to brown.
- Add the bok choy and peas and stir-fry for 2 minutes until the greens wilt but stay vivid, keeping the heat high so nothing steams.
- Tip in the rice and toss constantly, pressing it against the hot pan to drive off moisture, until the grains are heated through and beginning to crisp at the edges.
- Drizzle the soy sauce, sesame oil and white pepper around the edge of the pan, return the egg, and add the bean sprouts and remaining spring onion greens, tossing for one final minute so the sprouts stay crunchy.
- Taste, adjust with a little more soy sauce if needed, and serve immediately while piping hot.
