How to make it

  1. Bring a pot of water to a boil and cook the noodles for about 2 minutes until just softened but still firm; drain and rinse briefly under cool water to stop the cooking and prevent sticking.
  2. Slice the onion and bell peppers into thin strips, julienne the carrot, and shred the leafy greens.
