How to make it
- Preheat the oven to 190 C / 375 F and lightly oil a deep baking dish or ovenproof casserole.
- Rinse the rice under cold water until the water runs clear and drain well, then heat the olive oil in a large ovenproof pan over medium heat, add the onions and carrots, and cook for 6 to 8 minutes until they begin to soften.
- Stir in the garlic and curry powder and cook for about 1 minute until fragrant, then add the chopped tomatoes and cook for 5 minutes until they break down.
- Add the rinsed rice, drained chickpeas or black beans, peas, salt, and pepper, stirring to coat everything in the spiced base.
- Pour in the vegetable broth and bring the mixture to a simmer, then transfer it to the prepared baking dish if you are not using an ovenproof pan.
- Cover tightly with a lid or foil and bake for 30 to 35 minutes until the rice is tender and has absorbed the liquid.
- Remove from the oven, let it stand covered for 5 minutes, then fluff with a fork, taste for seasoning, and serve hot.
