How to make it

  1. Preheat the oven to 190 C / 375 F and lightly oil a deep baking dish or ovenproof casserole.
  2. Rinse the rice under cold water until the water runs clear and drain well, then heat the olive oil in a large ovenproof pan over medium heat, add the onions and carrots, and cook for 6 to 8 minutes until they begin to soften.
  3. Stir in the garlic and curry powder and cook for about 1 minute until fragrant, then add the chopped tomatoes and cook for 5 minutes until they break down.
  4. Add the rinsed rice, drained chickpeas or black beans, peas, salt, and pepper, stirring to coat everything in the spiced base.
  5. Pour in the vegetable broth and bring the mixture to a simmer, then transfer it to the prepared baking dish if you are not using an ovenproof pan.
  6. Cover tightly with a lid or foil and bake for 30 to 35 minutes until the rice is tender and has absorbed the liquid.
  7. Remove from the oven, let it stand covered for 5 minutes, then fluff with a fork, taste for seasoning, and serve hot.
